Chocolate Shortbread Stacks

Ingredients
- 1 1/2 cups flour
- 1/3 cup cocoa powder
- 3/4 cup icing sugar
- 7 1/4 ounces butter, chopped
- 2 egg yolks
- 1 teaspoon vanilla
- 1 cup cream, whipped
- 8 ounces strawberries
- 1 tablespoon icing sugar
- 1 tablespoon cocoa powder
- Berry Sauce:
- 8 ounces strawberries
- 1 tablespoon caster sugar
- 1-2 tablespoons water

Preparation
Step 1
Preheat oven to 415 degrees. Line two oven trays with baking paper.
Step 2
Place flour, cocoa, icing sugar and butter in food processor. Process 30 seconds or until mixture is fine and crumbly. Add yolks and vanilla; process until mixture comes together. Knead gently on a floured surface until just smooth.
Step 3
Roll pastry between two layers of baking paper to 1/4 inch thick. Using a 2 3/4 inch fluted round cutter, cut 18 rounds from the pastry. Plan on prepared trays. Bake for 8 minutes or until cooked through.
Step 4
Place a biscuit on serving plate, top with a little cream and some berries. Top with a second biscuit followed by cream and berries. Top with a third biscuit. Repeat with remaining ingredients to make another 5 stacks. Dust with extra cocoa.
Step 5
To make berry sauce:
Process berries and sugar until smooth, stir in enough water to make a pouring consistency.
