- 18 ounces pumpkin
- 1 1/2 cups flour
- 1/4 cup grated Parmesan cheese
- Sage Butter:
- 3 1/2 ounces butter
- 2 tablespoons chopped sage
- 1/4 cup grated Parmesan cheese

Preparation
Step 1
Preheat oven to 350 degrees. Brush a baking tray with oil or melted butter.
Step 2
Cut pumpkin into large pieces and place on prepared tray. Bake for 1 1/2 hours, until very tender. Cool slightly. Scrape flesh from skin, avoiding any tough or crispy parts. Place into a large mixing bowl. Sift flour into bowl, add Parmesan cheese and pepper. Mix until well combined. Turn onto floured surface, knead for 2 minutes, or until smooth.
Step 3
Divide dough in half. Using floured hands, roll each half into a sausage (16 inches long). Cut into 16 equal pieces. Form each piece into an oval shape, indent with floured for prongs.
Step 4
Heat large pan of water until boiling. Gently lower batches of gnocchi into water. Cook until gnocchi rise to the surface, and then 3 minutes more. Drain and keep warm.
Step 5
For sage butter
Melt butter in small pan, remove from heat and stir in sage. Set aside for 5 minutes to keep warm.
Step 6
To serve, drizzle gnocchi with sage butter and sprinkle with extra Parmesan cheese.
