Ingredients

  • 4 Zucchini
  • 1 Red Onion Chopped
  • 1 lbs Grd Meat Beef or Lamb
  • 1/2 C. Diced Tomatoes
  • 1/2 C. Kalamata Olives Sliced
  • 1/2 C. Feta (optional)
  • Tzatsiki Sauce (optional - recipe
  • follows)

Preparation

Step 1

Preheat oven to 350. Spray baking dish with cooking spray or coat lightly with oil. Make the zucchini boats. Cut ends off the zucchini & cut in half lengthwise. Using a spoon, hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in glass baking dish.

Step 2

Prepare a saute pan with cooking spray and heat to medium. Add in onion and ground meat. Cook until browned 4-5 minutes.

Step 3

Add diced tomatoes, olives & oregano and stir to combine.
Stuff the zucchini boats with the meat mixture. Cover pan with foil and bake for 25 minutes. Remove from oven, uncovered and add feta. Return to oven for 5 minutes.

Step 4

Remove from oven. Plate & serve with Tzatsiki Sauce.
