Ingredients

  • 4 large tart apples diced in food processor
  • 1/2 cup light brown sugar
  • 1/4 cup orange juice
  • 6 plain matzo break into pieces
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 cups sugar
  • 1/2 melted margarine ( 1 stick)
  • 3/4 cup golden raisins
  • 3/4 cup dried apricots chopped
  • 4 tables margarine ( for topping0

Preparation

Step 1

Soak matzo in 1 1/2 cups warm water ( don't get mushy )

Step 2

wisk eggs. add salt , sugar, cinnamon, melted margarine , raisins & apricots

Step 3

squeeze matzo. add to egg mixture. add apples also

Step 4

stir & put in greased 2 1/2 to 3 qt. casserole dish. Dot with 4 tbls margarine

Step 5

bake at 350 degrees for 1 hour. if top gets to brown cover. can be made 2 days ahead( refrigerate bring to room temp & reheat)
