Ingredients
- 1/2 cup white wine
- 1 stalk lemongrass, crushed
- 4 lime leaves
- 1 can coconut milk
- 3 TB red curry paste
- 2 TB fish sauce
- 2 TB lime juice
- 2-3lbs mussels
- 1/4 cup cilantro leaves
- 1/2 cup Thai Basil

Preparation
Step 1
Place white wine, lemongrass and lime leaves into pot. Simmer gently for a few minutes.
Step 2
Stir in coconut milk and red curry paste and simmer again.
Step 3
Stir in fish sauce, lime juice and add mussels to the pot. Cover and cook gently until mussels open
Step 4
Turn off heat and place in bowls for serving. Top with cilantro and basil
