Ingredients
- 1 cooked pie crust
- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 3 cups milk
- 2 eggs lightly beaten at room temperature
- 3 Tbsp butter
- 1 1/2 tsp vanilla
- 2 large firm bananas
- 1 cup whip cream

Preparation
Step 1
In a large saucepan combine sugar, cornstarch, salt and milk until smooth.
Cook and stir over medium-high heat until thickened and bubbly.
Reduce heat, cook and stir for 2 minutes longer
Remove from heat and stir a small amount of hot filling into the eggs.
Return to pan and bring to a boil and cook and stir for 2 minutes longer
Step 2
Remove from heat. Gently stir in butter and vanilla.
Cover with saran wrap and refrigerate for 30 minutes
Spread half the custard into crust. Slice and arrange bananas over filling. Pour remaining custard over bananas.
Spread with whipped cream and refrigerate for 6 hours.
