Ingredients

  • 10 oz Frozen Riced Cauliflower
  • 2-3 Tbsp Oil
  • 2 lb Ground Beef
  • 1 Small Red Bell Pepper -
  • Seeded & Chopped
  • 1 Small Onion - Chopped
  • 1 Tbsp Tomato Paste
  • 1/2 C. Water
  • 3 C. Shredded Colby/Jack
  • Cheese
  • 1 C. Sour Cream
  • LOW CARB TACO SEASON'N
  • TOPPINGS:
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 1/2 Tbsp black pepper
  • 1/2 Tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp cayenne pepper (or
  • 1/4 tsp if you like spicy)
  • Chopped Lettuce
  • Chopped Tomato
  • Sliced Black Olives
  • Avocado/Guac
  • Cilantro
  • Sliced Jalapeno
  • Salsa - Hot Sauce

Preparation

Step 1

Preheat oven to 350. Pan fry the cauliflower rice in oil over medium/high heat until browned. Transfer to greased 2qt casserole dish and spread in an even layer. Brown ground beef with red pepper and onion medium/high heat. Drain excess fat if necessary then add taco seasoning, tomato paste and water. Stir and cook until liquid absorbs. Transfer to casserole dis in an even layer on top of cauliflower rice.

Step 2

Top with shredded cheese and bake for 10 - 15 minutes. Spread sour cream over the top. Sprinkle with extra shredded cheese and preferred toppings.

TACO SEASONING: Stir all ingredients together. Store in airtight container. How to Use: Add 2 Tbsp seasoning and 1/2 cup water per pound of meat. Simmer until the extra liquid evaporates or absorbs.
