Ingredients
- 1T paprika
- 2t ground coriander
- 1/4 t cinnamon
- 1/4 t cayenne
- 3T olive oil
- 4cloves garlic, minced
- 1/4 C tomato paste
- 5oz frozen spinach
- 2tsugar
- 1 1/4 t salt
- 1 1/2 C water
- Pepper
- 4 frozen fish fillets ( cod, sole, snapper, tilapia)
- 1t lemon zest
- Cilantro
- Couscous

Preparation
Step 1
Mix first 5 spices together. Heat oil, add spice mixture and garlic, cook, stirring constantly, about 30 sec. Add tomato paste, cook,1min. Stir in spinach, 1 1/2 C water, sugar,salt,and pinch of pepper. Cover, bring to simmer
Cook, stirring occasionally, until spinach is dispersed, 3-4 min
Step 2
Nestle fish in sauce. Reduce heat, cook covered, 5-10 min until fish is flakey. Top with lemon zest and cilantro.
Step 3
Serve with couscous.
