Ingredients
- 1 (14 oz) sweetened coconut
- 2/3 cup sugar
- 6 tbs flour
- 1/4 tsp salt
- 4 egg WHITES
- 1 tsp almond extract
- 1 package semi sweet chocolate if wanted

Preparation
Step 1
MIX BY HAND: Mix coconut, sugar, flour and salt by hand in large bowl. Stir in egg whites and almond extract. Blend.
Drop by spoonful onto parchment paper covered cookie sheets.
Step 2
Bake at 325 degrees for 20 minutes or until edges of cookies are golden brown. Remove to wire racks to cool. If you choose: dip halfway in melted chocolate or drizzle on top.
