  • 3-3/4 c powdered sugar
  • 1-1/2 c peanut butter
  • 1/2 c butter melted
  • 1 t vanilla
  • 1/2 t salt
  • 2 c semi-sweet chocolate chips
  • 1 T shortening

Preparation

Step 1

Line two trays with parchment paper.

Step 2

Beat first five ingredients in large bowl with mixer on medium speed until blended. Shape into 1” balls. Chill until firm.

Step 3

Microwave chocolate chips and shortening in medium bowl on high for 45 seconds. Stir until smooth. If necessary, microwave in additional 15 second intervals until completely melted and smooth when stirred.

Step 4

Insert toothpick or fork into center of peanut butter balls. Dip 3/4 of ball into chocolate, leaving top uncovered. Allow excess chocolate to drip back into bowl. Place buckeyes on prepared tray. Remove toothpick. Smooth over hole. Repeat. If chocolate thickens, microwave in 10 second intervals.

Step 5

Chill buckeyes until firm.
