Ingredients
- 1 lb rigatoni or other pasta
- 2 to 3 cups cherry tomatoes
- olive oil
- salt and pepper
- Sauce:
- 1 1/4 sup cashes
- 1/4 cup olive oil
- 1 1/2 cups water
- 1 large roasted red pepper
- ( jar or maybe 1/2 cup )
- 1 clove garlic
- 1 1/2 tsp salt
- Crushed red pepper (optional)
- chives or basil for topping

Preparation
Step 1
Cook pasta
preheat oven to broil and on baking sheet, toss cherry tomatoes with olive oil, salt and pepper. Broil 10-15 minutes.
For sauce: blend all ingredients in a blender until very smooth and creamy. Pour over cooked pasta.
Step 2
serve with tomatoes over the top as well as herbs, salt and pepper and maybe also add crushed red pepper
The sauce thickens when you reheat it, so be prepared to just add more water if you’re eating leftovers.
