Ingredients

  • 6 bunches chopped curly parsley (including small stems)
  • 3/4 cup chopped mint
  • 1 cup prepared coarse wheat bulgar
  • 1.5 cups diced cucumber no seeds
  • 2 cups chopped tomatoes
  • 3/4 cup chopped green onions (tops included)
  • 3 TBS lemon juice
  • 2 cloves pressed garlic
  • 3 TBS olive oil
  • 1 TBS sea salt

Preparation

Step 1

In a large bowl add parsley and mint. Toss well. Add bulgar, cucumber, tomatoes, onion and salt. Mix well.

Step 2

In a glass measuring cup, whisk the olive oil, minced pressed garlic and lemon juice. Pour into salad and mix.

The parsley and mint can be chopped together in a food processor.
