Ingredients

  • 5 lbs. high gluten flour
  • 5 eggs
  • 2C sugar, take out 1 Tb
  • 3 TB yeast or 4 packets
  • 1 1/4- 1 1/2 cups canola oil
  • 2 TB salt
  • 4 C warm water (divide into 3 C and 1 C)

Preparation

Step 1

1. Preheat oven to 190.
In small bowl, proof the yeast in 1C warm water with 1 TB of the sugar until you see bubbles.

Step 2

In large bowl, place all the flour, then make a well in center,add #C warm water, remanining sugar and all the salt. Mix little. Now add oil, eggs, mix a little, Now put in yeast and mix together well. Shut off oven.

Step 3

Shape dough into a ball and take a handful of oil and rub all over the ball.

Step 4

Place plastic wrap on top of bowl and place a towel soaked with hot water ver bowl. Put bowl on lowest rack in oven.

Step 5

Rise for 2 to 2 1/2 hours.
Punch it down.
"Take challah"
Make loaves, cover with plastic wrap and let rise 30-45 minutes.

Step 6

Brush egg wash on top. Bake at 350 for 30-35 minutes.
