Ingredients

  • 1.2-3/4 lb thin spaghetti
  • 2 Tbsp vegetable oil
  • 2 cups fresh snow peas (4 handfulls)
  • 1 small red bell pepper, seeded & cut into thin matchsticks
  • 4 scallions, thinly sliced on an angle
  • 1 cup fresh bean sprouts (couple handfuls)
  • 1" peeled gingerroot, grated or minced
  • 3-4 garlic cloves, minced
  • 1/2 cup aged tamari (dark soy sauce)
  • 2 Tbsp toasted sesame oil
  • Salt to taste

Preparation

Step 1

Put large pot of water over high heat for the pasta. When water boils, add salt and pasta. Cook according to package directions. Drain.

Step 2

Heat wok or large skilled over high heat. When pan is hot, add oil, then immediately add snow peas, bell pepper, scallions & bean sprouts - stir fry for 2-3 minutes.

Step 3

Add ginger & garlic, continue to stir fry 1 more minute, then add pasta and combine with vegetables until evenly distributed.

Step 4

Add tamari sauce & toss until evenly coated. Transfer to platter, drizzle with sesame oil, add salt if desired.
