Ingredients
- 2 T plus 1 t olive oil
- 1 lb. pizza dough
- 1/2 c pecorino Romano
- 3/4 c cottage cheese
- 1/2 c refrigerated pesto
- 8 slices prosciutto torn
- 1 c arugula
- 1 t fresh lemon juice

Step 1
Brush large baking sheet with 1 tablespoon oil. Stretch out into large oval. Brush dough with 1 tablespoon oil; sprinkle with cheese. Bake at 450° until crust is browned, 8 to 10 minutes. Top with dollops of cottage cheese and pesto, leaving a 1 inch border. Top with prosciutto. In bowl, toss arugula with lemon juice and remaining 1 teaspoon of oil. Scatter arugula over pizza. Season.
