Ingredients

  • 1 pkg. flat pie dough
  • 1.5 lbs. fresh dark sweet cherries pitted (about 4 c)
  • 1.5 lbs. fresh tart red cherries pitted (about 4 c)
  • 3/4 c sugar plus more for sprinkling
  • 1/4 c cornstarch
  • 1/4 t anise seeds crushed
  • 1 egg

Preparation

Step 1

In a large bowl, toss cherries, reserving the juice if using frozen, sugar, cornstarch and crushed anise.

Step 2

Preheat oven to 375. Roll one piece of the dough into a 14x10 inch rectangle and place it in 9x13 pan. Press firmly against bottom and sides. Spread evenly with filling.

Step 3

On a lightly floured surface, roll a small piece of the dough into a 1/8 thickness. Cut into strips. Place strips diagonally across filling, leaving some exposed.As necessary, fold dough edges down and gently press into strips.

Step 4

In a small bowl whisk egg and 1 T water. Brush on top of strips and sprinkle with sugar. Bake 70 minutes or until filling is bubbling and crust is dark golden brown. Cool on wire rack. Use parchment to lift pie from pan.

For frozen cherries, use 2- 12 oz. pkgs of each tart and sweet and defrost in fridge overnight. Drain and reserve 1/2 cup of juice
