Cherry-Orange Cobbler

Ingredients
- 1 pkg. homemade biscuits
- 1 T turbinado sugar
- 1/2 c sugar
- 2 T cornstarch
- 2 oranges, (1 t zest and 1/2 c juice)
- 1/2 t cinnamon
- 2-1/2 lbs. fresh dark sweet cherries pitted (about 7 cups)
- 1 t vanilla

Preparation
Step 1
Preheat oven to 375. Form biscuits from package onto surface and sprinkle with turbinado sugar. Set aside.
Step 2
In a large bowl, combine sugar, cornstarch, zest and cinnamon. Stir in cherries, juice, and vanilla to combine. Spoon into 2 qt. Baking dish. Arrange biscuits on top.
Step 3
Bake for 50-60 minutes or until biscuits are golden and filling is bubbly. Let cool slightly on a wire rack. Serve warm or at room temperature.
1 lb. fresh cherries with pits = 3 c
1 lb. fresh cherries pitted = 2-1/2-2-3/4 c
1 lb. frozen cherries pitted = 3-3-1/2 c
12 oz. frozen cherries pitted = 2-2-1/2 c
If using frozen cherries, measure before thawing. Once thawed use the juice in the recipe.
