- 10 oz. raw unsalted cashews
- 3 T avocado oil
- 1 c thinly sliced shallots
- 3 cloves garlic
- 1 t fine sea salt
- 1/2 c water
- 1/4 c apple cider vinegar
- 1 t smoked paprika

Step 1
In a large bowl cover the cashews in boiling water. Let stand for 15 minutes. In a large skillet, heat the oil, shallots, garlic and salt. Cook, covered for 12 minutes or until tender, stirring occasionally. Uncover, increase heat to high. Cook and stir 3 minutes or until golden brown. Drain cashews, transfer to food processor bowl and add remaining ingredients. Process 5 minutes or until smooth. Fold in half of the shallot mixture. Top with the remaining mixture to serve.
