Ingredients
- 8 Everything Bagels cut in half
- 8 eggs
- 1-1/2 c cherry tomatoes halved
- 1/2 c pitted and sliced Kalamata olives
- 1/2-1 c chopped fresh herbs such as oregano or parsley or mint
- 1/2 c crumbled feta

Preparation
Step 1
Preheat oven to 400. Coat baking sheet in oil. Arrange bagels, cut side down on pan. Crack and egg into a glass measuring cup and pour into bagel hole. Repeat with all bagels. Season eggs with 1/2 t salt and 1/4 t pepper. Top with tomatoes, olives, half the herbs and feta.
Step 2
Bake for 10-12 minutes or until bagels are toasted and eggs are desired do eness. Let stand 5 minutes before serving. Top with remaining herbs.
