Ingredients
- 1-1/2 c plus 1 T flour divided plus more for pan
- 1 t baking powder
- 1/4 t kosher salt
- 1/2 c unsalted butter softened plus more for pan
- 3/4 c sugar
- 2 eggs with whites and yolks separated
- 1 t vanilla
- 1/3 c milk
- 1-1/2 c fresh blueberries
- 1 t turbinado sugar

Preparation
Step 1
Preheat oven to 350. Grease and flour 8x8 pan.
Step 2
Stir 1-1/2 c flour, baking powder and salt in medium bowl. Beat butter with mixer in a large bowl for 30 seconds. Beat in 1/2 c sugar until combines. Beat in egg yolks and vanilla. Add flour mixture and milk alternately, beating on low after each addition until just combined. Toss blueberries with remaining 1 T of flour in a bowl, then fold into batter.
Step 3
Wash beaters, then beat egg whites on medium until soft peaks form. Beat in remaining 1/4 c sugar , 1 T at a time, until stiff peaks form. Stir in a third of the egg whites into the batter, then fold in remaining egg whites. Spread batter into pan. Sprinkle with Turbinado sugar.
Step 4
Bake until toothpick comes out clean, about 50 minutes. Let cool on wire rack.
