Ingredients

  • 4 quarts grated cucumber
  • 4 cups chopped onions
  • 1/4 cup chopped hot pepper or
  • 2 t crushed red peppers
  • Cover with 2 cups salt. Let stand for 1 1/2 to 2 hours.
  • Drain in colander. Don't rinse. Squeeze lightly with hands.
  • Add:
  • 4 cups sugar
  • 1 pint vinegar
  • 1 t dry mustard
  • 1 t celery seed
  • 1 t tumeric
  • Cook on cook top covered for 20 minutes.
  • Stir occasionally.

Preparation

Step 1

Use red bell peppers for color (or pimento).
Do not peel cucumbers unless they are very mature and skin is tough.

Step 2

Store in sterile pint jars and process for 10 minutes in a hot water bath.
