Ingredients
- 4 quarts grated cucumber
- 4 cups chopped onions
- 1/4 cup chopped hot pepper or
- 2 t crushed red peppers
- Cover with 2 cups salt. Let stand for 1 1/2 to 2 hours.
- Drain in colander. Don't rinse. Squeeze lightly with hands.
- Add:
- 4 cups sugar
- 1 pint vinegar
- 1 t dry mustard
- 1 t celery seed
- 1 t tumeric
- Cook on cook top covered for 20 minutes.
- Stir occasionally.

Preparation
Step 1
Use red bell peppers for color (or pimento).
Do not peel cucumbers unless they are very mature and skin is tough.
Step 2
Store in sterile pint jars and process for 10 minutes in a hot water bath.
