Preheat oven to 250. Whisk together honey, lime juice, chile powder, salt, and cayenne in a large bowl until combined. Add peanuts; stir to coat evenly. Spread in a single layer on a rimmed baking sheet. Bake until fragrant, dry, and slightly browned, about 30 minutes, stirring once halfway through cook time. Remove peanuts from oven, and cool on baking sheet 5 minutes. Transfer to a serving bowl; stir in lime zest, and serve.
