Risotto Style Pasta with Caramelized Onions

Ingredients
- 2 T, olive oil, divided
- 1 1/2 C minced white onion
- 1 1/4 C acini de pepe pasta
- 3 C chicken stock, divided
- 1/2 C white wine
- 1/2 t kosher salt
- 1/4 t black pepper
- 2 oz. grated Parmeson cheese
- 1 t thyme leaves

Preparation
Step 1
Heat med. skillet over med. heat. Add 1 T olive oil; swirl to coat. Add onion; reduce heat to low & cook 20 min. or until onion is light brown, creamy & caramelized, but watch for hot spots & burning. If liquid cooks off too quickly, add a bit of water. Remove from heat; set aside
Step 2
Heat heavy skillet or saucepan over med. heat. Add remaining olive oil; swirl to coat Add dry pasta; cook 5 min. or until pasta is nice toasty color; stirring constantly, Addition & i C of stock, stir frequently until stock is absorbed. Add wine & more stock 1/2 C at a time, stirring frequently until each portion of stock is absorbed before adding more. When done, add salt & pepper. Remove from heat; add cheese, stirring to melt into pasta. Serve immediately
