Ingredients

  • 1-1/2 c fresh or frozen fruit
  • 8 oz. cream cheese softened
  • 1/3 c sugar
  • 1 t lemon or lime juice
  • 1/2 to 1 t vanilla
  • 1/2 c fruit preserves, jam or marmalade
  • 2 sheets frozen puff pastry thawed in fridge
  • 1 egg lightly beaten

Preparation

Step 1

Thaw fruits if frozen. Preheat oven to 400°. Line 2 baking sheets with parchment paper.

Step 2

In a medium bowl beat cream cheese with a mixer on medium until smooth. Beat in sugar, lemon juice, and vanilla. In a small bowl stir together fruit and preserves.

Step 3

On a lightly floured surface, roll one puff pastry sheet into a 10 1/2 in.². Keep remaining sheet chilled. Cut into nine 3 1/2 inch squares and place on a baking sheet. Prick with a fork to within 1/2 inch of edges. Combine egg and 1 tablespoon water; brush over squares. Spread each square with 1 tablespoon cream cheese mixture, top with about 1 1/2 tablespoons fruit mixture.

Step 4

Bake 15 to 18 minutes or until golden brown. Remove and let cool on wire racks. Repeat with remaining puff pastry.
