Stuffed Churro Puffs

Ingredients
- 2 tablespoons sugar
- ¼ teaspoon ground cinnamon
- 1 cup water
- ½ cup butter
- teaspoon salt
- 1 cup all-purpose flour
- 4 eggs
- 13.4 ounce can dulce de leche
- 3 cups Sweetened Whipped Cream or pudding or ice cream

Preparation
Step 1
Preheat oven to 400°F. In a small bowl combine sugar and cinnamon. Line a large baking sheet with parchment paper. In a medium saucepan combine the water, butter, and salt. Bring to boiling over medium. Add flour all at once; stir vigorously. Cook and stir until mixture forms a ball, 1 to 2 minutes. Cool 10 minutes. Add eggs, one at a time, beating well after each addition.
Step 2
Drop 15 heaping tablespoons of dough onto prepared baking sheet. Sprinkle generously with the cinnamon-sugar mixture.
Step 3
Bake 30 to 35 minutes or until golden and firm. Remove churro puffs to a wire rack; let cool.
Step 4
Before serving, cut tops from cream puffs; remove soft dough from inside. Fill each with a rounded tablespoon of dulce de leche. Add a spoonful of Sweetened Whipped Cream, pudding, or ice cream. Replace tops.
