Ingredients
- 1 french baguette, thinly sliced
- ricotta cheese
- 8 shiitake mushrooms, finely diced
- 8 white button mushrooms, finely diced
- 8 cremini mushrooms, finely diced
- 8 cloves garlic, minced
- 1 tsp evoo
- 1/2 tbsp white wine
- 1/2 tbsp fresh rosemary
- 1/2 tbsp fresh parsley
- 1 tbsp pine nuts
- 1/2 tsp salt
- pepper

Step 1
heat skillet on medium heat and add evoo. add garlic and fry for few seconds until fragrant.
add all mushrooms and saute until all water is released from cooking the mushrooms burns off completely.
add salt, some pepper and combine.
add white wine and mix to de glaze the pan
add rosemary, parsley and pine nuts. combine and cook for 1-2 minutes.
season with additional salt and pepper to taste if needed.
Preheat oven 350 degrees. place french baguette slices in oven and bake until slightly golden. remove slices from oven and allow to cool.
on each slice spread generous amount of ricotta cheese and then mushroom mixture.
