Ingredients
- 8 oz rice noodles
- 8 oz bean sprouts
- 1/2 c peanut butter
- 3 tbsp fish sauce or soy sauce
- 1 tbsp lime juice
- 1 tsp sugar
- 1 tsp chopped thai chili
- 1/2 c green onions chopped
- 1/4 c peanuts chopped

Step 1
bring large pot of salted water to a boil. put in noodles in large bowl and pour enough boiling water over noodles to cover them. stir. let stand 3 minutes or until noodles are soft and pliable. when noodles are nearly tender, add bean sprouts, soak 1 minute. reserve 1/2 c of soaking liquid. drain noodles and sprouts. rinse under cold water 1 minute. drain again and shake off excess water.
in small bowl, whisk together peanut butter, fish sauce, lime juice, sugar, chili pepper. whisk in 1/4 c soaking liquid. dressing should easily coat back of a spoon. adjust seasonings as needed.
In large bowl, combine noodles and sprouts with half of dressing, toss gently with 2 forks. divide into bowls. garnish with green onions and peanuts.
