Ingredients
- 1 1/2 c veg broth
- 1 c quinoa
- salt and pepper
- 3 tbsp evoo
- 2 tbsp orange juice
- 1/4 tsp dijon mustard
- 1 grated garlic clove
- 1 bunch tuscan kale
- 1 thinly sliced head radicchio
- 1 orange sectioned
- 1 avocado peeled, pitted and sliced
- 1/4 c chopped walnuts
- salmon fillets or diver scallops

Step 1
combine veg broth and quinoa in saucepan. bring to a boil. cover, reduce heat and simmer 15 minutes or until liquid is absorbed. remove from heat and let stand covered 10 minutes. fluff with a fork.
in small bowl, whisk together evoo, orange juice mustard garlic, salt and pepper.
stem, wash and tear kale into bite-size pieces and place in large bowl. add 2 tbsp dressing and massage into kale for 30 seconds and let stand for 10 minutes. add radicchio, toss to coat.
stir 1 tbsp dressing into cooked quinoa.
grill salmon or scallops.
arrange kale mixture into bowls and divide quinoa into bowls. top with salmon or scallops.
divide orange, avocado and walnuts among bowls and drizzle with remaining dressing.
