You can use regular noodles or zucchini strips for the noodles in the recipe.

Ingredients
- 1 1/2 pounds hamburger or Italian sausage
- 1 6 oz. can tomato paste OR 1 8 oz. can tomato sauce
- 1 16 oz. can whole tomatoes
- 1 t. minced garlic
- 1 1/2 T. Italian seasonings
- 1 1/2 t. salt
- 2 T. minced onions
- 1/2 c. water OR 1 8 oz. can mushrooms with juice
- 1/2 pound uncooked lasagna noodles OR 3 zucchinis cut into strips lengthwise and blanched in hot water
- 8 oz. grated mozzarella cheese
- 16 oz. ricotta OR cottage cheese
- 1/2 c. Parmesan
- 2 T. parsley
- 1 t. salt
- 1/2 t. pepper

Preparation
Step 1
Brown hamburger or sausage and add tomatoes, seasonings, and water or mushrooms. Simmer 20 minutes. Combine ricotta (or cottage cheese) with eggs, Parmesan & seasonings in a bowl.
Step 2
Layer 1/2 the meat mixture, then noodles or zucchini, then 1/2 cheese mixture, and repeat.
Step 3
Cover tightly with microwavable wrap and cook High 15 minutes. Add mozzarella cheese and continue cooking 25-20 minutes on level 4. Let set 15 minutes before serving.
Alternately, cook in a 375 F. oven covered with foil for 25 minutes. Remove foil and add 8 oz. grated mozzarella cheese and continue baking 25 minutes. Let stand 15 minutes before serving.
