Ingredients

  • 1 to 1 1/2 lbs boneless skinless chicken breasts, cut into bite size pieces
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 cups cooked brown rice
  • 6 Tbsp butter
  • 4 cups broccoli
  • 2 cups shredded cheddar cheese
  • 1 lb bacon, cooked and chopped

Preparation

Step 1

Preheat oven to 400 degrees. Season chicken pieces with salt, pepper, garlic powder, and onion powder. Set aside. On a piece of heavy duty foil, scoop 1/2 cup of cooked rice. Top rice with 1 Tbsp butter. Add 1/2 cup chicken. Top with 2/3 cup broccoli, 1/3 cup cheese, and 3 Tbsp bacon. Bring up sides and close at top. Leave room for heat circulation and little opening at top for steam to release. Place in single layer on baking sheet. Bake 20-25 mins til 165 degrees. Remove from heat. Let stand 5-7 mins.

To freeze, assemble but do not cook. Close them up tightly and freeze. Let thaw in fridge for 24 hours. Open each packet a little at the top. Cook but add another 5-10 minutes. Add a little parmesan to add depth to flavor.
