  • 3 cups old fashioned rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup ground flaxseed
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup chopped pecans
  • 1/2 cup melted coconut oil or butter
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 cup milk
  • 2 cups chopped fresh or frozen peaches (about 2 large)

Preparation

Step 1

Preheat oven to 350 degrees. Grease a 13x9 dish. Combine first 7 ingredients. Drizzle oil or butter over dry ingredients. Stir til combined. In separate bowl whisk syrup, eggs, and milk. Add wet ingredients to oat mixture. Stir til combined. Stir in peaches. Spread mixture out in baking dish. Bake 20-25 mins until middle is mostly set.

To freeze spread in dish but do not bake. Cover with plastic wrap and foil. Freeze. Let dish thaw in fridge. Bake as instructed.
