Protein Banana Nut Bread

Ingredients
- 3 large eggs
- 3 large very ripe bananas, well mashed
- 1 TB vanilla extract
- 2 TB honey
- 1.5 cups blanched finely ground almond flour
- 2 scoops cinnamon roll protein
- sprinkle of ground cinnamon
- sprinkle of salt
- 1 tsp baking soda
- Optional add ins: dairy free choc chips and/or pecans

Preparation
Step 1
Preheat oven to 350 degrees. Line a small bread pan with parchment paper. Lightly spray the lined pan with oil.
In a medium bowl, whisk together the eggs, mashed bananas, vanilla and honey/sweetner.
Gradually whisk in the almond flour, protein, cinnamon, kosher salt, and finally the baking soda. Add in optional add ins. Whisk until smooth.
Transfer batter to the prepared pan. Gently tap the pan on the counter top to evenly distribute the batter.
Bake until browned and set, and a toothpick inserted in its center comes out dry, 50-60 minutes (*50 min. for mc).
Step 2
Using the excess parchment paper as handles, carefully remove the banana bread from the pan and transfer to a wire rack. Carefully remove the parchment to allow air to circulate.
Cool the bread completely on the cooling rack. Slice and serve.
