Ingredients

  • 3 15 oz cans small white beans, rinsed and drained
  • 2 1/2 cups cubed cooked ham
  • 1 1/2 cups chopped carrots
  • 1 cup thinly sliced celery(2 stalks)
  • 1 cup chopped onion(one large)
  • 1/4 t black pepper
  • 2 14.5 oz cans diced tomatoes with basil, garlic, and oregano, undrained
  • 2 14.5 oz reduced-sodium chicken broth
  • 8 cups torn fresh kale or spinach leaves
  • Finely shredded Parmesan cheese(optional)

Preparation

Step 1

In a 5-6 quart slow cooker combine the first 6 ingredients(through pepper). Stir in tomatoes and broth.

Step 2

Cover and cook on low 6-8 hours or on high 3-4 hours

Step 3

Before serving, stir in kal. If desired, sprinkle each serving with Parmesan cheese.
