Ingredients
- 1 Tbsp of olive oil
- 1 lb of ground bee (ground turkey)
- 1 (1.25 oz) package of taco seasoning
- 1 ( 10 oz can) ro-tel mild diced tomatoes and green chilies
- 1 tablespoon tomato paste
- 8 oz of spaghetti
- 1/2 cup of shredded cheddar cheese
- 1/2 cup of shredded mozzarella cheese
- 1 roma tomato, diced
- 2 tablespoons chopped fresh cilantroleaves

Preparation
Step 1
Heat olive oil in a large stockpot or duch oven over medium heat. Add ground beef and cook until beef has browned, about 3 - 5 minutes, making sure to crumble the beef ass it cooks;
Step 2
drain excess fat and add taco seasoning
Step 3
stir in rotel tomatoes, paste, spaghetti and 3 cups of water bring to a boil; cover, reduce heat and simmer until pasta is cooked through about 13 to 16 minutes
Step 4
remove from heat and top with cheeses cover until melted about 2 minutes,
Step 5
serve immediately, garnished with tomato and cilantro if desired
