  • 1 cup cashews or blanched almonds
  • 1 cup vegan yogurt
  • 1/2 cup water
  • 3 Tbsp tapioca starch
  • 1 Tbsp + 1/2 tsp agar
  • 1 tsp salt
  • 1 tsp truffle oil
  • 1 Tbsp truffle mustard
  • 1 tsp truffle salt

Preparation

Step 1

Using a Vitamix or other powerful mixer. Place each ingredient in mixer, in the order that it is listed in the ingredients. Process until smooth.

Step 2

Pour the mix into a medium saucepan and heat on medium low, stirring constantly. When the cheese becomes "stretchy", it is done. Pour into a mold. Cover with plastic wrap pressing onto the cheese, so that it does not create a film on top. Place in refrigerator until fully chilled
