Ingredients

  • 12 3 inch pretzel rolls split
  • 2 c fresh baby spinach
  • 1 c drained and thinly sliced red bell pepper
  • 1/2 c thinly sliced red onion and cucumber
  • 1 c well drained sauerkraut or coleslaw
  • 6 oz thinly sliced swiss cheese
  • 1/2 c thousand island dressing
  • 6 T melted butter
  • 1 T coarse ground mustard
  • 1 t caraway seeds crushed
  • 1/2 t minced dried onion

Preparation

Step 1

Preheat oven to 350. Line 13x9 pan with foil. Coat with Pam. Arrange rolls in bottom.

Step 2

Layer spinach, peppers, onions, cucumbers, sauerkraut, and swiss cheese over roll bottoms. Spread dressing on cut side of roll tops and add to sandwiches in pan. Stir together butter, mustard, caraway seeds, and dried onion; drizzle over rolls. Cover with foil.

Step 3

Bake 15 minutes. Uncover; bake 10-15 minutes or until cheese is melted and rolls are lightly brown.
