French Toast with Strawberry Syrup

Ingredients
- 2 cups strawberries, cut in half
- 1 cup sugar
- 1 tsp vanilla extract
- 1/2 cup or more water
- 6 pieces of white bread
- 6 eggs
- 1/2 to 2/3 cup milk
- 4 T butter
- 1 T cinnamon
- Strawberry syrup for serving
- White powder sugar

Preparation
Step 1
To make the strawberry syrup, cut strawberries in half and add to saucepan along with the sugar, vanilla extract, and water. Bring to boil, and stir. Turn heat down to med. low and stir until it reduces.
Step 2
In a large bowl, whisk together eggs, milk, cinnamon and pour into a low shallow bowl for dipping bread. Heat griddle or pan with butter. Dip bread slices in egg mixture, coating both sides. Do no over crowd the pan. Cook until golden brown, about 2 minutes per side. Repeat with remaining butter and bread slices.
Step 3
Place bread slices on plate, ladle strawberry syrup over slices, and then sprinkle powder sugar on top.
Left over berries are good chilled on buttered toast the next day if desired.
