Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 or so cup of sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 C. all-purpose flour
  • 1 Tbsp finely chopped fresh rosemary
  • 3/4 tsp. course salt
  • 1/2 C. fine sanding sugar (if wanted)

Preparation

Step 1

Mix together butter and sugar on medium until pale and fluffy. Mix in egg and vanilla.

Step 2

Reduce speed to low and mix in flour, rosemary and salt. I also mixed in craisins - a hint of fruit.

Step 3

Roll dough into two 6-inch logs, wrap in Saran Wrap and freeze.

Step 4

Baking the cookies: Preheat one to 375 F. Ujwrap the dough, roll it in sanding sugar (if you want to but I didn't) and cut into 1/4" rounds. Bake for 15-18 minutes, until edges are golden. Makes about 3 1/2 dozen Cookes.
