Ingredients
- 2 Heads romaine lettuce
- 4 anchovies
- 2 cloves of garlic
- 1/2 t dry mustard
- Freshly ground pepper to taste
- 2 raw eggs on hot water
- 1 lemon halved with net to strain out seeds
- 1/2 cup garlic croutons
- 1/2 cup of grated parmesan cheese

Preparation
Step 1
Remove and discard outer leaves of romaine lettuce. Wash remaining lettuce and break into bite size pieces. Wrap in a towel and Refridgerator until serving time.
Put a few drops of oil in the bottom of a large wooden bowl with a little pepper.
Add anchovies and make a pate using forks.
Add garlic and cloves and blend into paste.
Break eggs, discarding whites. Add yolks to bowl and whisk until smooth.
Start adding olive oil very slowly letting it flow down the side of the bowl. (You will end up making a real oamyonaise)
Squeeze the lemon juice, add the mustard, and lots of fresh pepper. Mix well.
Add romaine, croutons, and cheese. Toss lightly but thoroughly and serve.
