- 1/2 c butter cut into pieces
- 1 1/2 c flour
- 5 eggs
- 1 1/2 c shredded gruyere cheese 6 oz
- 1 T Dijon mustard
- 1/8 t cayenne pepper

Preparation
Step 1
Line 2 baking sheets with parchment paper. In a large sauce pan combine 1 1/2 cups water, the butter, and 1/4 teaspoon salt. Bring to boil. Immediately add flour all at once; stir vigorously using a large wooden spoon. Cook and stir until mixture forms a ball. Remove from heat. Let cool 10 minutes. Add eggs, one at a time, stirring after each until smooth. Stir in cheese, mustard, and cayenne pepper.
Step 2
Using a pastry bag fitted with a half inch star tip, pipe batter into 1 inch mounds close together on prepared baking sheets. or use a small cookie scoop to drop batter into one and a quarter inch mounds. Freeze 1 to 2 hours or until firm. Transfer to freezer containers. Freeze up to one month.
Step 3
To serve: preheat oven to 400°. Line a baking sheet with parchment paper. Place desired number of mounds 1 inch apart on prepared baking sheet. Bake 25 minutes or until puffed and golden. Serve warm.
