Ingredients
- 1 Tbsp butter or ghee
- 1 cup cooked shredded pork
- 4 large eggs
- 2 Tbsp heavy whipping cream
- Salt
- Ground black pepper
- 1 bag Cauliflower Rice
- 1/2 cup shredded Mexican cheese blend
- 1 avocado, pitted/peeled/sliced
- 1/4 cup sour cream

Preparation
Step 1
In skillet, melt butter over medium-high heat. Add the pork, and cook until it is crisped at the edges, about 5 minutes.
Step 2
Meanwhile, in a small bowl, whisk the eggs and heavy whipping cream, and season with salt & pepper. Divide the cauliflower rice into 2 separate bowls.
Step 3
When the pork is done, remove from skillet and divide into 2 bowls. Reduce the pan heat to medium, and scramble eggs for 3 minutes, or until desired doneness.
Step 4
Divide eggs between the 2 bowls. Add the cheese, avocado slices, & sour cream.
