Preparation
Step 1
Preheat oven to 425. Scoop out 1-2 Tbsp of avocado from each half and set aside for another recipe (or just eat.) Place the scooped avocado halves in a small baking dish.
Step 2
Carefully crack 1 egg into each half. Season with salt & pepper.
Step 3
Bake for 15-20 minutes or until whites are set and the yolks are cooked to your liking. Serve immediately.
