Ingredients
- 1/4 cup flour seasoned with S&P
- 2 eggs beaten
- 1 T sugar
- 1 T grated parmesan cheese
- 2 T EVOO
- 4 skinless chicken breasts - halved
- 1/4 cup butter
- 2 tsp. minced garlic
- 1/4 cup dry sherry
- 1/4 cup lemon juice
- 2 tsp. low-sodium chicken base

Preparation
Step 1
Mix together flour, S&P. In another bowl, whisk eggs, sugar, and cheese, until sugar is dissolved.
Step 2
Heat EVOO in large skillet, dip chicken in flour then egg mixture, and lay in skillet and cook chicken till golden, about 6 mins. Remove chicken, set aside
Step 3
In same skillet, melt butter, stir in garlic, sherry, lemon juice and chicken base, bring to simmer and stir till smooth about 5 mins. Return chicken to skillet, and gently simmer for about 15 mins.
