***Eva Lau's Chinese Chicken Salad

Ingredients
- Salad Base
- 1/2 package Chinese bean threads, fried
- 1 c. sliced green onions
- 3/4 c. shredded carrots
- 1 lb.+ cooked, shredded chicken meat
- 1/2 c. whole beaten eggs
- 1 bunch fresh cilantro, chopped
- Dressing
- 1 c. soy sauce (I use low salt one)
- 1 c. rice vinegar
- 1/2 c granulated sugar
- 1 c. sesame oil
- 4 tbsp. water
- 2 tbsp. dry mustard mixed with the water
- 3 tbsp. peanut butter
- 1/2 c lightly toasted sesame seeds(toast in fry pan with no oil)

Preparation
Step 1
Pan fry eggs into thin sheets and cut into ⅛" wide pieces. Set aside.
Line a large serving platter with the fried bean threads.
For next layer, place chicken, making sure to leave a margin so the bottom layer shows.
In the same manner, layer the eggs, green onions, shredded carrots and cilantro.
Keep this refrigerated until ready to use.
When ready to serve, sprinkle toasted sesame seeds over salad.
Mix all the dressing ingredients together and pour over salad.
You won’t need all the dressing...
