Ingredients
- 1 Tbsp. olive oil
- 1 portabello mushroom, sliced
- 1 cup onion, finely chopped
- 1/4 cup fresh Italian parsley, chopped
- 1/4 tsp. salt
- 1 clove garlic, minced
- 1 cup chicken broth
- 1/4 cup sherry or chicken broth
- 1 lb. uncooked large shrimp, peeled and cleaned
- 8-oz. pkg. fettucine, cooked
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. fresh chives, chopped

Step 1
Heat oil in a large saucepan over medium-high heat. Add mushrooms, onion, parsley, salt and garlic; saute 4 minutes or until onion is tender, stirring frequently.
Stir in broth, sherry or broth and shrimp; bring to a boil. Add fettucine; cook 3 minutes or until shrimp turn pink, tossing to combine. Sprinkle with cheese and chives.
