Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/4 cup flour
  • 1/4 cup grated Romano Cheese
  • 1 tsp black pepper
  • 1/4 cup butter
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 cup Marsala cooking wine
  • 1/4 cup fresh chopped parsley
  • Fresh mushrooms, optional
  • salt to taste

Preparation

Step 1

1. Combine flour, cheese and ,pepper. Flatten chicken breasts and cover thoroughly with flour mixture.

2.Heat oil and. butter in a large skillet over medium heat. Add garlic and saute for two minutes being careful not to burn. Add chicken breasts and cook until golden brown on both sides. Add broth, lemon juice and wine. Simmer for an additional 3-5 minutes. Stir in mushrooms and parsley cover and remove from heat.

3. Add pasta to a large pot of boiling salted water. Cook to taste and remove with a large slotted spoon onto individual plates and cover with chicken and sauce.
