Ingredients

  • Cirtus Glaze:
  • 2 med. lemons
  • 1 large orange
  • 1 cup of cake flour
  • 3/4 cup sugar
  • 1 1/2 teas. salt
  • 2 tab. salad oil
  • 1 teas. vanilla extract
  • 4 large egg yolks
  • 8 large egg whites
  • 1/2 teas. cream of tartar
  • 1 cup thawed frozen,
  • light whipped topping
  • strips of orange peel

Preparation

Step 1

Squeeze lemons for 1/4 cup of juice. Grate peel and squeeze 1/4 cup of juice from orange.
In a large bowl, mix cake flour, sugar, baking powder, and salt. In small bowl with wire whisk, beat juices, peel, salad oil, vanilla, and egg yolks. Beat yolk mixture into flour mix until well blended.
Preheat oven to 325.
In large bowl, with high speed, beat egg whites and cream of tartar until stiff peaks form; gently fold egg whites mix into batter until blended. Pour batter into ungreased cake (9inch) pans.
Bake 20 minutes.

Glaze:
Ice with the cool whip and garnish with the orange peels.
