Ingredients

  • Topping:
  • 1/4 cup brown sugar, packed
  • 1/4 cup sifted all-purpose flour
  • 2 tablespoons butter or margarine
  • 2 teaspoons ground cinnamon
  • Batter:
  • 1-1/3 cups sifted all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter or margarine
  • 1/2 cup light brown sugar, packed
  • 1 egg
  • 1/2 cup milk

Preparation

Step 1

Preheat oven to 375 degrees. Lightly grease bottom of muffin pan cups or use paper liners.

Topping:

In small bowl combine topping ingredients, mix until crumbly.

Batter:

Sift flour with baking powder and salt. In large bowl of mixer at medium speed bet butter until fluffy. Beat in brown sugar, then egg until very light and fluffy. At low speed, blend in milk then flour mixture, just until combined. Divide evenly into muffin cups. Sprinkle topping over each muffin. Bake 20 minutes or until cake tester inserted in center comes out clean.
