Cajun Pork Ribs

Ingredients
- 4 pound pork spareribs
- 2 tablespoons Cajun seasoning
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 cup mustard
- 1/2 cup chili sauce
- 1/2 cup medium or hot salsa
- 2 tablespoon firmly packed brown sugar
- 1/8 teaspoon cayenne pepper

Step 1
Preheat oven to 350°F. Lightly spray a shallow roasting pan with nonstick cooking spray.
Cut the spareribs to fit the pan. Trim any excess fat. Combine the Cajun seasoning, oregano, thyme, garlic powder, onion powder and paprika in a small bowl until well mixed.
Brush both sides of the ribs lightly with the mustard. Sprinkle the Cajun rub on both sides of the ribs, pressing the rub into the meat with your fingers. Place the ribs, meaty side up, in the pan. Bake for 1 hour.
Meanwhile, combine the chili sauce, salsa, brown sugar and cayenne pepper in a small bowl until well mixed. Spoon or brush the sauce on the ribs. Bake, brushing frequently with the sauce, until tender, 20–30 minutes longer. Cut the ribs into serving-size pieces using a sharp knife or kitchen scissors. Serve.
