Ingredients
- 2 lbs medium sized white potatoes, peeled
- 8 tbs butter
- 6 oz hickory smoked ham, diced
- 1 cup heavy cream, heated
- salt and pepper to taste
- 1/4 cup Parmesan cheese, grated
- 1 cup onion, minced

Step 1
Preheat oven to 375°. Butter pie dish or an 8 inch square casserole dish. Cook potatoes in water until tender, drain and keep hot. Heat 4 tbs butter, saute ham and onions over medium heat until onions are translucent (about 5 minutes). Drain and reserve cooking juices.
Whip potatoes with 3 tsp butter, hot cream, cooking juices, salt, pepper and 1/2 of the parmesan cheese. Whip until smooth. Add ham and onions.
Place in casserole dish and sprinkle with remaining cheese. Bake in 375° oven until bubbly hot and golden (about 20-25 minutes). Can be made ahead and then baked.
